WE ARE PASSIONATE ABOUT OUR CHEESE

Made by hand in small batches, our cheese originates on our farm in Carlow using milk from our own herd of goat, our flock of sheep and our neighbour’s cows.  Using milk from known livestock only is important to us for a number of reasons, not least of all provenance and care.  We hold these values close.  It means we have utmost confidence in our product; it means we know each and every stage from animal husbandry through to milking, through to cheese making.  This is what defines our product; this is what defines our Farmhouse cheese.
